1 cup almonds, Verde Valle

1 garlic clove, peeled and crushed.

1/2 cup basil leaves.

1/2 cup parmesan cheese.

6 tablespoons olive oil.

2 cups Super Extra Rice, Verde Valle

3 tomatoes

2 garlic cloves

1 serrano chile

½ cup Mexican style cream

½ onion

¼ cup fresh cilantro leaves

½ cup sliced almonds

¼ cup golden raisins

¼ cup dried cranberries

3 cups water

Oil, as needed

Salt and pepper, to taste

PREPARATION

  1. Rinse the rice thoroughly and drain. In a rice cooker, sauté until lightly golden. Blend the onion, chile, cilantro, garlic, and tomatoes. Add ½ cup of water and salt to taste. Pour the mixture and remaining water into the rice and cook over low heat for 25 minutes. Let cool and set aside.
  2. Transfer the rice into a Christmas tree-shaped mold, pressing it down firmly with a spoon.
  3. Unmold onto a serving platter and decorate with the dried fruits. For the cream, use a piping bag if preferred. Enjoy.
