Christmas Tree with Super Extra Rice, Verde Valle
ingredients
1 cup almonds, Verde Valle
1 garlic clove, peeled and crushed.
1/2 cup basil leaves.
1/2 cup parmesan cheese.
6 tablespoons olive oil.
2 cups Super Extra Rice, Verde Valle
3 tomatoes
2 garlic cloves
1 serrano chile
½ cup Mexican style cream
½ onion
¼ cup fresh cilantro leaves
½ cup sliced almonds
¼ cup golden raisins
¼ cup dried cranberries
3 cups water
Oil, as needed
Salt and pepper, to taste
PREPARATION
- Rinse the rice thoroughly and drain. In a rice cooker, sauté until lightly golden. Blend the onion, chile, cilantro, garlic, and tomatoes. Add ½ cup of water and salt to taste. Pour the mixture and remaining water into the rice and cook over low heat for 25 minutes. Let cool and set aside.
- Transfer the rice into a Christmas tree-shaped mold, pressing it down firmly with a spoon.
- Unmold onto a serving platter and decorate with the dried fruits. For the cream, use a piping bag if preferred. Enjoy.
