Tomato morrocan rice
Morrocan rice is an excelent garnish to go with every dish. Easy and fast to prepare!
ingredients
1 cup Extra long grain rice Verde Valle®
2 tablespoons olive oil
1 white onion, chopped in medium pieces
1 green pepper, chopped in medium pieces
½ yellow pepper, chopped in medium pieces
3 garlic cloves
¼ teaspoon salt
1 tomato, chopped in medium pieces
1 tomato, grated
2 1/3 cups chicken soup
2 tablespoons tomato pasta
3 tablespoons cilantro, finely chopped
½ teaspoon cumin
½ teaspoon paprika
¼ teaspoon turmeric
1 cinnamon stick
PREPARATION
FRY lightly the rice in the olive oil, until it turns transparent. ADD onion, peppers, garlic, and salt; be careful so the vegetables get soft and not cooked. ADD all the chopped tomatoes, with cilantro and spices. Let it parboil for 3 minutes. At last, pour chicken soup and cover. OVER low heat, cook until soup consumes and rice gets soft. Serve hot.
