Green Rice with Avocado
ingredients
1 cup of Verde Valle Super Extra Rice, rinsed
3 tablespoons of vegetable oil
¼ onion
1 garlic clove
2 tablespoons of cilantro
1 serrano pepper
1 teaspoon of dried oregano
Salt and pepper, to taste
2 cups of vegetable broth
Extra chopped cilantro (for garnish)
Cotija cheese (for garnish)
1 avocado
Juice of 1 lime
2 tablespoons of cream
PREPARATION
- Blend the onion, pepper, garlic, oregano, cilantro, salt, pepper, and enough water until smooth.
- In a skillet, heat the oil and sauté the rice until translucent.
- Add the blended mixture and cook for a few minutes.
- Pour in the vegetable broth, reduce the heat to medium-low, cover, and cook for 20 minutes.
- For the avocado purée, blend all the ingredients until smooth and set aside.
- Once the rice is cooked, mix it with the avocado purée until fully incorporated.
- Garnish with Cotija cheese and cilantro, and serve with warm tortillas.
