1 cup of Verde Valle Super Extra Rice, rinsed

3 tablespoons of vegetable oil

¼ onion

1 garlic clove

2 tablespoons of cilantro

1 serrano pepper

1 teaspoon of dried oregano

Salt and pepper, to taste

2 cups of vegetable broth

Extra chopped cilantro (for garnish)

Cotija cheese (for garnish)

1 avocado

Juice of 1 lime

2 tablespoons of cream

PREPARATION

  1. Blend the onion, pepper, garlic, oregano, cilantro, salt, pepper, and enough water until smooth.
  2. In a skillet, heat the oil and sauté the rice until translucent.
  3. Add the blended mixture and cook for a few minutes.
  4. Pour in the vegetable broth, reduce the heat to medium-low, cover, and cook for 20 minutes.
  5. For the avocado purée, blend all the ingredients until smooth and set aside.
  6. Once the rice is cooked, mix it with the avocado purée until fully incorporated.
  7. Garnish with Cotija cheese and cilantro, and serve with warm tortillas.
