Red Bell Pepper Hummus with Toasted Pita, Pumpkin Seeds, and Feta
ingredients
FOR THE SAUCE:
1 1/2 "chiles anchos", Verde Valle, deveined, cleaned, disinfected and slightly fried.
2 "chiles pasilla", Verde Valle, deveined, cleaned, disinfected, slightly fried.
1/2 big tomato, cleaned
1/2 onion in quadroons
2 garlic cloves without skin
1 ½ taza de Arroz Verde Valle®
1 taza de aceite de maíz
FOR THE RICE:
1 1/2 cup super extra rice, Verde Valle
1 cup corn oil
1/2 onion in quadroons
3 garlic cloves without skin
2 1/2 cups hot water
2 chiles cuaresmeños
10 branches parsley
5 branches cilantro
1/2 tablespoon coarse salt or to taste
FOR THE SALT OF CHILE PASILLA
50g "chiles pasilla", Verde Valle, deveined, cleaned, disinfected, lightly roasted
1 tablespoon salt
1 pack Red Bell Pepper Hummus, Helena’s
½ cup feta cheese, cubed
2 tablespoons pumpkin seeds
Pepper, to taste
Olive oil, as needed
Pita bread
Mint leaves, for garnish
PREPARATION
- Cut the pita bread into triangles and toast on a hot grill.
- Open the pack of hummus and spoon it onto a serving plate. Top with feta cubes and pumpkin seeds. Drizzle with olive oil and sprinkle with pepper.
- Garnish with mint leaves and serve with the toasted pita bread. Enjoy.
