Beans and vinegar salad
Easy to prepare, this bean salad is a very fresh and healthy dish.
ingredients
4 cups Pinto beans Verde Valle®, cooked and drained
1 pasilla chilli, seedless
¼ cup sugar
1 cup wine vinegar
2 garlic cloves, chopped
1 green pepper, in squares
1 serrano chilli, sliced
1 thick ham slice, in cubes
2 boiled eggs, peeled and sliced
PREPARATION
BOIL vinegar with pasilla chilli, garlic and sugar in a small pot; let it boil for 10 minutes. Take away from heat and let it cool. Once it is cold, blend everything until it gets perfectly grinded. STIR pinto beans with serrano chilli. Place in another bowl the pepper and ham. COVER with vinegar and stir everything. Let it settle for 10 minutes and just before serving, decorate with the eggs.
