3 cups black bean, Verde Valle®, cooked without soup

3 "Chiles anchos" Verde Valle®, empty and soaked in hot water

3 "Chiles guajillos" Verde Valle®, empty and soaked in hot water

½ cup hot water, where chilli was soaked

2 chipotles (can)

1 garlic clove

1 pinch cummin

2 tablespoons pork butter

3 "chiles de árbol" to decorate

500 g chorizo, shreded

Salt and pepper

PREPARATION

Beans: MASHED beans and settle. Marinade: GRIND the “chiles” with the half of water where they were soaked; add chipotle, garlic, cummin until you get a uniform sauce. Strain and keep. HEAT the butter tablespoons in a frying pan, pass the “chiles de árbol” over the butter for a few minutes, take them away and keep. FRY the chorizo in butter until it turns browned, take it out of the frying pan and keep. ADD beans to the frying pan and let them boil for few minutes, pour the marinade, stir until every thing integrates and let boil for other minutes. ADD chorizo and continue moving, season with salt and pepper to your liking. DECORATE with “chiles de árbol” the ones you kept. SERVE hot.
