Pumpkins and chickpeas salad
A very light and delicious way to eat chickpeas. What are you waiting for trying?
ingredients
1 cup Chickpeas, Verde Valle®, cooked
2 tablespoons raisins, Verde Valle®
2 tablespoons sugar
1 onion, finely chopped
2 tablespoon pine nuts
2 tablespoon pine nuts
2 garlic cloves, chopped
½ teaspoons "chile de árbol" flakes
2 pumpkins, chopped in cubes
1 tablespoon white wine vinegar
2 tablespoon water
¼ cup tomato pureé
Salt to your liking
PREPARATION
HEAT oil in a big frying pan, fry onion, raisins, pin nuts, garlic, flakes, chili, moving constantly until onion gets soft, add also the tomato purée and still moving. ADD pumkins, chickpeas, vinegar and water. Cover and reduce heat moving constantly until pumpkins get soft. SEASON with salt and sugar if it is necessary.
