PREPARATION

PUT clean beans in a press cooker, fill with water with the double of the beans measure, put a piece of onion and over medium heat, cover and let it cook until beans get soft 2 hours approximately. When they get soft take away from heat and keep. HEAT in a frying pan one oil tablespoon, fry the onion until it looks trasnparent, add green chili and brown it a little bit more. Add tomato and cook until everything incorporates. Season with salt, take away from heat and keep. FRY bacon in another pan until it gets browned, after this, take away from the frying pan and keep. With the same grease fry ham until it gets lightly browned and keep. ADD tomato sauce to beans with jam, chorizo and bacon, stir. Pour beer and jalapeños in escabeche and cook over medium heat so flavors can be mixed. After boiling take away from heat and continue sprinking the chopped cilantro.
