½ kg lentils, Verde Valle®
½ onion, finely chopped
1 garlic clove, finely chopped
2 parsley branches, finely chopped
1 teaspoon sweet pepper
½ cup oil to fry
Sauce
8 tomatoes
2 cups water
¼ onion
1 garlic clove
2 green "chiles serranos"
1 pinch dry orégano
1 tablespoon oil
Salt to your liking
PREPARATION
PUT lentils, onion and garlic in a pot, cover with water. HEAT over high heat until the water starts boiling. Reduce heat, cover and cook until lentils get soft. DRAIN and let it cool. GRIND drained lentils in a food processor. POUR in a bowl and add egg, parsley, sweet pepper and salt; mix until you get a uniform pasta. FORM meatballs with a lemon size. HEAT enough oil in a frying pan, fry meatballs until they get uniformly browned. Drain over paper towels and serve covered of tomato sauce. For the sauce: GRIND tomatoes with water, onion, garlic, chiles, orégano and salt. Strain. HEAT 1 oil tablespoon in a pot and pour the sauce until it starts boiling. Check season and serve.
