Lentils soup with carrots and spinach
Prepare this delicious and full of energy lentil soup. You will remember grand ma´s recipe!
ingredients
½ cup lentils, Verde Valle®, clean and soaked
4 cups water
1 carrot, chopped in cubes
¼ onion finely chopped
2 garlic cloves, chopped
1 bay leaves
250 g spinach, chopped
1 tablespoon olive oil
Salt an pepper to your liking
PREPARATION
Put water in a pot, lentils, carrots, onion, garlic and bay leaves. PUT over heat. Once it begins boiling, reduce heat, cover and settle until lentils get soft. For 20 minutes. SOAK and take out bay leaf. Take back lentils and vegetables to the pot, add the spinach and season with salt and pepper to your liking. COOK over low heat until spinach integrates and gets soft. SERVE immediately on plates.
