2 cups Pinto bean Verde Valle®, cooked

3 ancho chillis

3 guajillo chillis

2 cups bean soup

½ kg. pork leg, chopped in small pieces

3 cups water

1 garlic clove

¼ onion

2 tablespoons chicken broth powder

½ teaspoon cumin

2 tablespoons oil

Salt to taste

PREPARATION

HEAT UP water in a pot and add onion, garlic and salt. Let it boil, add pork leg and cook until it softens. HEAT water in another pot and add both guajillo and ancho chillis. Let it boil until everything gets soft, turn off the heat and let it cool. GRIND with garlic, onion, cumin and chicken broth powder, strain and reserve. HEAT oil in a pot, add the marinated sauce and cook for 3 minutes. Add beans, pork and bean soup. BOIL for 10 more minutes and serve.
