Rice, brocoli and cheese pan

ingredients
1 cup Extra long grain rice Verde Valle®
1 medium white onion, finely chopped
2 cups brocoli, chopped into small pieces
3 tablespoons butter, divided
1 ½ cups vegetable soup
1 teaspoon salt
2 ½ cups light cream
1 ½ cups cheddar and manchego cheese, grated
½ teaspoon pepper
PREPARATION
HEAT 1 ½ butter tablespoon in a pot over medium heat. Add extra long grain rice and cook until it looks shiny and a bit golden. ADD vegetable soup and salt and let it boil; cover and cook until the liquid consumes and the rice is cooked. Let sit for 10 minutes and transfer it to an oven bowl. PREHEAT oven at 180°C. In a frying pan, melt the rest of the butter, fry the onion and add the brocoli when the onion turns transparent; cook for 4 minutes. Add cream and cook for 2 more minutes. POUR this mixture in the bowl with the rice. Mix it carefully with a spatula, put it in a container previously greased and sprinkle it with the rest of the cheese. Bake until cheese melts and gets a bit golden.
