FOR THE RICE
1 ½ cups Verde Valle rice
¼ yellow onion, minced
1 garlic clove, minced
2 1/2 cups seafood stock
2 tbsp. canola oil
FOR THE SEAFOOD
½ lb. clams
½ lb. crab claws
½ lb. mussels
¼ lb. shrimp
¼ lb. calamari, sliced
¼ lb. salmon, chopped
¼ lb. scallops
1 bell pepper, diced
½ cup celery, diced
½ cup yellow onion, diced
1 jalapeño, seeds removed and minced
2 garlic cloves, minced
1 ½ tbsp. dried oregano
2 tbsp. canola oil
½ cup cilantro, chopped
PREPARATION
In a large saucepan on medium heat, add oil and rice to pan and sauté for 2-3 minutes until rice becomes light golden brown. Add, onion and garlic and cook for 2-3 minutes. Add the seafood broth, cover and simmer for 15 minutes, or until the rice is tender but firm, save for later. In a large sauté pan on medium heat, add oil, onions, garlic, bell peppers, jalapeño and celery and sauté for 2-3 minutes. Add oregano, clams, mussels and cook for 3 minutes. Then add shrimp, calamari, scallops, and salmon, stir and cook for about 3 minutes. Stir in the par-cooked rice, mix well and cook until the seafood is done, about 5-8 minutes. Finish by stirring in chopped cilantro. Season with salt and pepper to taste.
