Creamy rice with caramelized plantain
ingredients
300g shredded coconut, Verde Valle
1/2 cup icing sugar
1 L natural yogurt
1 cup coconut cream
Coco rallado Verde Valle® extra para decorar
TO DECORATE

250 g super extra rice, Verde Valle
245 gr stick margarine
1 can sweetened condensed milk
1 cup whole milk
1 cinnamon stick
1 ripe plantain
Brown sugar (to taste)
2 tablespoons vanilla extract
PREPARATION
- Rinse the rice thoroughly and drain. In a saucepan, add 2 cups of water and the cinnamon stick. When it comes to a boil, add the rice, cover, and simmer over low heat for about 20 minutes or until the liquid is absorbed.
- Uncover and add the whole milk, condensed milk, and vanilla. Cook for another 5 minutes, stirring gently.
- In a skillet, melt the iberia margarine and sauté the plantain slices. Sprinkle with brown sugar and cook until caramelized.
- Serve the creamy rice topped with the caramelized plantain slices and garnish with ground cinnamon. Enjoy.
