300g shredded coconut, Verde Valle

1/2 cup icing sugar

1 L natural yogurt

1 cup coconut cream

Coco rallado Verde Valle® extra para decorar

250 g super extra rice, Verde Valle

245 gr stick margarine

1 can sweetened condensed milk

1 cup whole milk

1 cinnamon stick

1 ripe plantain

Brown sugar (to taste)

2 tablespoons vanilla extract

PREPARATION

  1. Rinse the rice thoroughly and drain. In a saucepan, add 2 cups of water and the cinnamon stick. When it comes to a boil, add the rice, cover, and simmer over low heat for about 20 minutes or until the liquid is absorbed.
  2. Uncover and add the whole milk, condensed milk, and vanilla. Cook for another 5 minutes, stirring gently.
  3. In a skillet, melt the iberia margarine and sauté the plantain slices. Sprinkle with brown sugar and cook until caramelized.
  4. Serve the creamy rice topped with the caramelized plantain slices and garnish with ground cinnamon. Enjoy.
