Rice Bowl with Green Salad
ingredients
2 cups Extra long grain rice Verde Valle®
½ cup white onion
1 garlic clove
2 tablespoons oil
2 tablespoons butter
4 cups water
2 cups pea, fresh or frozen
1 cup peppermint or mint leaves
Sea salt, to taste
1 ½ cups Super Extra Rice, Verde Valle
2 cups baby spinach
1 green apple, cut into sticks
¼ kg ground beef
2 tablespoons chopped onion
1 tablespoon chopped parsley
1 egg
Salt and pepper, to taste
Oil for frying, as needed
Red sauce
PREPARATION
- Rinse the rice thoroughly and drain. In a saucepan, bring 3 cups of water to a boil. Add 1 cup of rice and a pinch of salt. Cover and cook over low heat for about 25 minutes or until the liquid is fully absorbed.
- In a bowl, combine the ground beef with chopped onion, parsley, egg, salt, and pepper. Form into meatballs and fry until golden brown on all sides. Dip the meatballs into the red sauce and simmer for 5 minutes. Set aside.
- In a bowl, serve the rice and arrange the meatballs with sauce on the side. Top the rice with baby spinach and apple sticks. Enjoy.
