Spirals of Zucchini and Sweet Potato with Black Beans, Feta Cubes, and Grilled Chicken

200g chia Verde Valle
150g sesame seeds
150g pumpkin seeds
4 tablespoons linseed flour
500ml water
1/2 tablespoon salt
2 sheets waxed paper
1 cup Peruvian beans, Verde Valle
¼ onion
1 garlic clove
2 spiralized sweet potatoes
2 spiralized zucchinis
1 cup feta cheese, cubed
2 whole boneless chicken breasts
1 cup cherry tomatoes, halved
Salt and pepper, to taste
Olive oil, as needed
PREPARATION
- Rinse and clean the beans. In a pot with enough water, add salt, onion, and garlic. Boil for 35 minutes or until tender. Drain and set aside.
- In a pot of boiling water, blanch the spiralized sweet potatoes and zucchinis for 2 minutes. Drain and reserve.
- On a deep plate, arrange the vegetable spirals and top with grilled chicken, feta cheese, cherry tomatoes, and a generous serving of Peruvian beans.
- In a small container, mix oregano, lime juice, and olive oil. Cover and shake until well combined. Drizzle over the dish. Enjoy.
