Chickpea salad
Stop preparing the same boring salad. Chickpeas and tuna fish are a delicious and healthy mixture.
ingredients
2 cups chickpeas, Verde Valle®
4 cups water
1 can tuna fish, drained
½ red onion, chopped in cubes
2 tomatoes, chopped in cubes
1 avocado
1 lettuce, chopped
2 branches cilantro, finely chopped
Dressing
¼ cup lemon juice
3 tablespoons olive oil
1 teaspoon mustard
Salt and pepper to your liking
Salad cookies to serve with
PREPARATION
COOK chickpeas with water in a press cooker. Once it begins to whistle, let it for 22 minutes. Let it cool so you can open it and drain chickpeas. Dressing: PUT lemon juice, olive oil, mustard, salt and pepper on a jar, close it and shake it until ingredients integrate. PUT chickpeas, tuna fish, chopped onion, chopped tomatoes, lettuce, avocado finely sliced and the rest of cilantro; in a bowl and mix. ADD the mustard and lemon dressing and mix.
