½ cup quinoa

1 cup water

1 tablespoon olive oil

1 sweet potato, peeled and chopped in cubes

¼ onion, chopped

1 garlic clove

¾ teaspoon cumin

¼ teaspoon ginger

¼ teaspoon sweet pepper

¼ teaspoon salt

½ cup vegetable soup

1 cup chickpeas, Verde Valle®, cooked

2 bunches spinach

PREPARATION

COOK quinoa with water following the instructions in the package until it gets soft. HEAT olive oil, add onions and cook until they turn transparent, add garlic and spices. COOK for one more minute. Add sweet potatoes, tomatoes, vegetable soup and chickpeas. COOK everything minimum for 30 minutes. Add spinach, cook for 2 more minutes, add quinoa and mix until everything incorporates perfectly. SERVE immediately.
