Paella
ingredients
4 big portobellos
¼ cup olive oil
¼ cup balsamic vinegar
1 pouch precooked garden vegetable rice, Verde Valle®
½ cup almonds, filleted
Salt and pepper to your liking
2 cups nonstick rice, Verde Valle
¼ kg chistorra sausage
½ kg pork ribs
½ kg chicken, cubed
½ kg mussels
½ kg head-on shrimp
2 bell peppers, julienned
Olive oil, as needed for frying
2 baby octopuses
½ cup green peas
Salt and pepper, to taste
PREPARATION
- In a paella pan, sauté the chistorra, chicken, pork ribs, and shrimp in olive oil. Once cooked, set aside.
- Add the rice and peas to the pan, season with salt and pepper, and cook covered until the rice is nearly done.
- When it begins to boil, add the seafood and bell peppers. Season again, cover, and continue cooking.
- Cook over medium heat for 20 minutes. Uncover, fluff the rice with a fork, and garnish with chopped parsley if desired.
