4 big portobellos

¼ cup olive oil

¼ cup balsamic vinegar

1 pouch precooked garden vegetable rice, Verde Valle®

½ cup almonds, filleted

Salt and pepper to your liking

2 cups nonstick rice, Verde Valle

¼ kg chistorra sausage

½ kg pork ribs

½ kg chicken, cubed

½ kg mussels

½ kg head-on shrimp

2 bell peppers, julienned

Olive oil, as needed for frying

2 baby octopuses

½ cup green peas

Salt and pepper, to taste

PREPARATION

  1. In a paella pan, sauté the chistorra, chicken, pork ribs, and shrimp in olive oil. Once cooked, set aside.
  2. Add the rice and peas to the pan, season with salt and pepper, and cook covered until the rice is nearly done.
  3. When it begins to boil, add the seafood and bell peppers. Season again, cover, and continue cooking.
  4. Cook over medium heat for 20 minutes. Uncover, fluff the rice with a fork, and garnish with chopped parsley if desired.
