Enfrijoladas pintas
This enfrijoladas pintas are everyone's favorite! Perfect to enjoy anytime.
ingredients
3 cups Pinto beans Verde Valle®, cooked and grounded
2 cup chicken breasts, cooked and shredded
½ cup cream
100 gr. cheese, grated
12 thin tortillas
½ red onion
½ cup fried chorizo
Enough oil for frying
PREPARATION
HEAT oil in a frying pan and fry the tortillas; you have to do this very quickly so they don´t get hard. ADD the beans. Soak the tortillas in the bean soup using a different hot pan. Take them out quickly and fill them with chicken. Form a triangle and place it on the plate were you are going to serve them. COVER with some more hot beans. Decorate with cream, grated cheese, fried chorizo and onion. SERVE immediately.
