Pip grandma´s rice
We share with you a traditional recipe from generations ago.
ingredients
1 ½ cup Extra long grain rice Verde Valle®
1 medium onion, chopped
3 garlic cloves, peeled
¾ cup vegetable oil
½ onion, chopped
¼ cup of water
2½ to 3 cups hot water
¾ tablespoon salt
3 serrano chilies
4 cilantro or parsley branches
3 tablespoons butter
½ onion, grated
¾ cup Raisins Verde Valle®
1 ¼ cup pip
PREPARATION
For the rice: SOAK rice in a container with hot water during 10-15 minutes WASH until water looks clean, drain. HEAT oil in a pan, brown onion and garlics. Add rice, fry until it looks transaparent and uniform. Drain the oil. GRIND onion in a blender garlic and a quarter of water. ADD rice; let the liquid evaporates. ADD hot water with the chiles, cilantro and parsley branches. Season. COVER the pan. Cook over low heat for 30 to 40 minutes. Settle and cover for 10 minutes. Move away chiles and parsley. For the garnish: HEAT butter in a frying pan and fry the onion. Add raisins and ¾ of pips, brown them. Season and settle.
