Purépecha soup with black beans
With a very special touch this recipe coming from Michoacan is healthy and delicious.
ingredients
3 cups black bean, Verde Valle®, cooked
4 "Chiles anchos", Verde Valle®
1 onion
2 garlic cloves
2 tomatoes, boiled
1 bay leaf
2 thyme branches
2 marjoram branches
Oil
Salt
PREPARATION
HEAT 3 oil tablespoons in a medium pot over medium-low heat. Add onion and garlic, cook for 5 minutes. BLEND tomatoes with salt, strain and pour in the pot. Let this dry. GRIND beans with a cup of chicken soup, pour beans in the pot. Let it boil and then season with bay, thyme, marjoram and salt. Add the rest of the chicken soup. CUT the “chile ancho” in little pieces and pass it over the oil, fry for a few minutes and take it away. SERVE hot and use “chile ancho” to decorate your dishes.
