Rice and chicken spinach
Rice and chicken spinach, a light whim for every occasion.
ingredients
1 cup Extra long grain rice Verde Valle®
¼ cup raisins
2 cups water
500 gr. spinach
2 tablespoons olive oil
4 measures of water
¼ cup black olive, chopped
1/3 cup white wine
Salt and pepper
PREPARATION
PUT in a pan water and rice, season with salt and pepper. Reduce heat when it begins to boil and cover until rice gets soft and water consumes. WASH spinach and put them in a pan with rice. Cover and let it settle for 5 minutes. Mix both ingredientes together with a fork. Add wine, olives and raisins into a pot. When they begin boiling, reduce heat. SEASON chicken breasts with salt and pepper. Heat a grill, add oil and fry chicken breasts on both sides until they turn brown. Finally cut chicken breast into slices. PLACE rice with spinach on a plate, place the sliced chicken breast over it and season with raisins and olives.
