Rice and mushrooms soup
Serve this delicious rice and mushroom soup as the principal dish, perfect for any day of the year.
ingredients
¾ cups Extra long grain rice Verde Valle®
2 tablespoons chicken and vegetable soup
2 tablespoons olive oil
1 medium onion, sliced
1 garlic clove
3 cups mushrooms, sliced
1 cup peas, precooked
½ cups parmesan cheese, grated
Cilantro, chopped
Salt and pepper
PREPARATION
HEAT a pot with oil, fry onion and garlic until they get transparent, when this happens, add mushrooms and fry for a few minutes. ADD rice and chicken soup; let it cook until rice gets soft, if it is necessary add a little bit more of chicken soup; season with salt and pepper. ADD peas and boil everything for a few minutes. Before serving add cheese and cilantro. SERVE very hot.
