Rice stuffed pumpkins
If you want to serve a light food, rice stuffed pumpkins are an excelent option.
ingredients
1 cup Extra long grain rice Verde Valle®, previously cooked
1 tablespoon canola oil
1 garlic clove, finely chopped
½ onion, finely chopped
100 g bacon, finely chopped
1 pinch salt and black pepper, powdered
4 pumpkins in halves, whiten and ready to stuff
1 cup manchego cheese, grated
PREPARATION
PREHEAT your oven at 180ºC. HEAT oil in a frying pan, brown garlic, onion and bacon. Add pumpkin pulp and super extra rice, Verde Valle. Increase flavor with salt and pepper. PLACE pumpkins in a mold and stuff them with the rice mixture. COVER with grated cheese and cook au gratin in your oven at 180ºC for 10 minutes. ENJOY hot.
