Rice with coconut milk and mango
A delicious dessert of sweet rice, to eat at any time you want!
ingredients
1½ cups Morelos rice Verde Valle®
4 cups of water
2 cups coconut milk
½ cup sugar
½ teaspoon salt
1 tablespoon sugar
¼ teaspoon salt
3 mangos, cut into cubes
PREPARATION
WASH rice until water gets clear. PUT in a pot 4 cups of water, once it begins to boil, reduce heat, cover and let the water absorbs and rice gets cooked. MEANWHILE rice is cooking, stir in another pot 1 ½ cups of coconut milk, ½ cups of sugar, and ½ teaspoon of salt, place over medium heat until it gets boiled. Take away from heat and settle. Once rice has been cooked, coat with this mixture, cover and settle for an hour. HEAT in another pot the rest of the coconut milk, the sugar tablespoon and the salt until it begins to boil. BEFORE serving put the rice in bowls, put mango cubes over it and coat it with the coconut sauce. SERVE immediately.
