Seafood rice
Follow this recipe, an explosion of rice and seafood full of flavor. You won't resist!
ingredients
2 cups Morelos rice Verde Valle®
4 tomatoes
¼ onion
2 garlic cloves
2 teaspoons olive oil
8 cups fish soup
1 kg chirla clams
½ kg cocktail shrimp
8 fish slices
½ kg octopus, cooked and chopped
1 chile cuaresmeño
1 epazote branch
Salt and pepper
PREPARATION
BLEND tomato, onion and garlic. Heat olive oil in a big pot, pour on it the strained tomato and let it fry until it gets seasoned. ADD chile cuaresmeño cut into strips. WHEN the tomato has a darker color and it gets dry, add rice, fish soup, shrimps, clams, octopus and fish slices. ADD epazote branch. Season with salt and pepper. Cover the pot and reduce heat. LET it cook until rice gets soft. This rice can´t be completely dry, so if it dries up, pour a little of fish soup and season with salt. SERVE hot.
