Spicy bean soup
Looking for a dish full of flavor? Try to combine peruano bean with this ingredients.
ingredients
1 cup peruano bean, Verde Valle®
1 piece onion
2 tablespoons oil
1 little onion, finely chopped
2 garlic cloves, mashed
1 red pepper, finely chopped
1 green pepper finely chopped
1 "chile cuaresmeño", sliced
¾ cup mushrooms, sliced
1 pinch cummin
1 cup tomato pureé
3 tomatoes chopped in squares, without seeds
1 tablespoon chicken soup powder
2 tablespoons fresh cilantro, chopped
PREPARATION
WASH beans, put them in a pot with enough water and a piece of onion. Boil until they get cooked, if it is necessary add a little bit more of hot water. If you use a press cooker, cooking will be faster. IN another pot heat oil, fry chopped onion until it turns soft, add garlic and fry for a few more minutes. Add peppers and don´t stop moving until they get soft. ADD “chile cuaresmeño” slices, mushrooms and cummin letting everything integrates; add tomato purée and cook over low heat for a few minutes. INCORPORATE tomatoes with all the soup. Let it boils and check season. Add chicken soup to your liking. When it has boiled for a few minutes, sprinkle cilantro on it before serving.
