Vegetables and bean soup
Taste this bean soup prepared with unique ingredients that will delight your palate. Healthy and easy to prepare.
ingredients
4 cups black bean, Verde Valle®, cooked in its soup
3 cups potatoes, chopped in cubes and cooked
1 cup celery, chopped
1 cup white onion, finely chopped
2 cups water
2 tomatoes
4 garlic cloves
½ cm ginger, finely chopped
2 parsley branches
1 chile habanero
¼ small white onion
1 tablespoon basil
2 tablespoons olive oil
1 cup spinach, chopped
Salt and pepper
PREPARATION
HEAT olive oil in a pot, fry onion and celery, add potatoes and cook for a few minutes. BLEND tomatoes with parsley, chile habanero, garlics and ginger with ½ cup of water, strain and pour in the pot, settle for a few minutes. ADD cooked beans with its soup, cook until potatoes get soft. Take away from heat and add spinach, settle for 5 more minutes. SERVE.
