Baked rice with chicken

ingredients
2 cups Extra long grain rice Verde Valle®
2 tablespoons olive oil
1 chicken breast, boneless, peeled and cut into pieces
1 leek, sliced
3 cups chicken soup
1 cup peas, precooked
2 tablespoons lemon juice
1 cup parmesan cheese, grated
2 tablespoons mint, chopped
Salt and pepper
PREPARATION
PREHEAT your oven at 200º. Heat oil in a frying pan, fry chicken until it gets browned, then take it away. On the same frying pan, fry leek until it looks transparent. ADD rice, fry it for a few minutes until the grains separate from each other. POUR rice in an oven container, chicken and leeks, add chicken soup and cover it with aluminium paper. BAKE for 20 minutes, open, add peas, cover it again, and continue baking for 20 more minutes. AFTER this time, open, add lemon juice, mint and cheese. Season with salt and pepper, stir with a fork and cover again. BAKE 3 more minutes before serving.
